Behind the Beans
We named this coffee after Carnival, the biggest festival in Brazil.
Carnival is a blend of beans from two farms in the city of Lambari, Brazil. Both Fazenda Mombuca and Fazenda Paraguai are located in the Sul de Minas region. The coffee grown in this region makes up about 30% of the country’s coffee exports!
Fazenda Mombuca is located in the Bairro Jacú e Mombuca community. The farm is owned and managed by Gabriel Lelis Junqueira de Paiva, his wife Ana, and their children Gabriel, Luiz, and Kaic.
After years of working in the dairy industry, Gabriel began his journey in coffee production in 1994 when he planted some coffee trees on a piece of land he owned at the time. In 2007, the family inherited the land that now makes up Fazenda Mombuca.
Since then, they have considerably expanded their production, partly because of their dedication to improving processing methods. The farm is now around 15 hectares, which is equal to about 37 acres and has over 20,000 coffee trees!
Fazenda Paraguai is located in the São Bartolomeu community. The farm is owned and managed by Claudio Vinicius Pimetnel and has been in the family since the 1940’s. Knowledge of coffee production has been and will continue to be passed down through the generations of their family.
One of the top priorities of the Pimetnel family is to produce coffee in a way that is environmentally conscious. This is realized through their use of natural fertilizers, minimization of chemical inputs, and preservation of natural resources. Fazenda Paraguai consists of 19.5 hectares, or 48 acres.

How do I get free shipping?
We offer free domestic ground shipping on all orders that are $50 or higher.
What do I need to know about shipping chocolate?
Shipping chocolate is a delicate adventure – especially in the summer.
In order to make sure we get your chocolates to you in the way they leave our workshop, we have placed the following systems in place:
- We chill our chocolates for 24 hours prior to shipping to make sure they stay cool as long as possible in transit.
- We only ship chocolate orders early in the week to avoid packages spending the weekend outside of a temperature-controlled environment. Any orders placed Thursday and later will ship the next Monday.
- In summer, we ship our chocolates with insulation and icepacks. This utilitarian packing solution helps protect your chocolate in transit. We occasionally make the tough call to postpone shipping on hot days, and we always update you accordingly.
- We recommend upgrading to expedited shipping when chocolate is in your order. We cannot offer refunds for faulty chocolates that have been shipped with our $5 flat-rate option.
