Behind the Beans
We named this limited edition coffee after a famous Aztec legend. Legend says that the Aztecs were instructed by their God, Huitzilopochtli, to build their capital city where they saw an eagle perched on a tree. On an island in what was once known as Lake Taxcoco and is now known as Mexico City, they found this scene and established their capital Tenochtitlan.
Our Eagle of Tenochtitlan coffee was grown in the Soconusco region. This region is located in the southwest corner of Chiapas along the border of Guatemala. With its rich volcanic soil and plentiful rainfall, the region is an ideal place for growing coffee.
Most Chiapas farmers are smallholders who hand-pick coffee cherries to ensure quality. Coffee is then brought in parchment to be dry-milled, sorted for quality and prepared for export. These beans were produced using this same method. Expect a rich, delicious brew with medium acidity and body.

What do I need to know about shipping chocolate?
Shipping chocolate is a delicate adventure – especially in the summer.
In order to make sure we get your chocolates to you in the way they leave our workshop, we have placed the following systems in place:
- We chill our chocolates for 24 hours prior to shipping to make sure they stay cool as long as possible in transit.
- We only ship chocolate orders early in the week to avoid packages spending the weekend outside of a temperature-controlled environment. Any orders placed Thursday and later will ship the next Monday.
- In summer, we ship our chocolates with insulation and icepacks. This utilitarian packing solution helps protect your chocolate in transit. We occasionally make the tough call to postpone shipping on hot days, and we always update you accordingly.
- We recommend upgrading to expedited shipping when chocolate is in your order. We cannot offer refunds for faulty chocolates that have been shipped with our $5 flat-rate option.
